PEPPERMINT ROUGH SLICE

One of my absolute favourite sweet treats. This slice will send you to a place of secluded indulgence (especially important for that 'me time' when surrounded by young kidlets) AND will just as equally, TEST YOUR WILL POWER for the rest of the day! Packed with Australian Macadamias, it's a nutty dream come true. This recipe is a masterpiece with only SIX INGREDIENTS, and if you're partial to the delightful combination of Peppermint and Chocolate, you'll be converted to an obsession! When I say it's my favourite, I'm certainly not alone... Eyes light up when teeth sink into that crunchy, smooth, creamy texture.

There's no offers made of: "Who wants the last piece?"... Ha Ha Ha Ha!... It's already in my mouth!




PEPPERMINT ROUGH SLICE

Makes: 1 loaf shaped ( 6cm x 20cm x 5cm deep ) slice
Preparation Time: 20 minutes
Setting Time: 1 hour
Fat & Calories: Who cares when you’re eating fantastically healthy… Come on!


Ingredients:

1 cup of Australian Macadamias
3 heaped tablespoons of Virgin, Cold Pressed, Organic Coconut Oil
30 small organic pitted dates
1/2 cup of organic Cacao powder
15 drops of Peppermint Essential Oil
2 cups of organic shredded coconut

Note: Stevia can be added to increase sweetness to taste.


Method:

  1. Add the Macadamias and coconut oil to a processor and blend until a nut paste is formed.
  2. Add the dates, cacao, peppermint essential oil and shredded coconut to the processor and blend until everything is evenly combines. Try to process until the dates have been broken down quite well and the mixture has become a little runny due to the melted coconut oil.
  3. Line a rectangular container with baking paper. Press a sheet of baking paper into the container so that the paper overlaps the two longest container sides. This allows the entire slice to be lifted out of the contained once set.
  4. Spoon out the mixture into the lined container. Smooth over the surface of the mixture with a spoon and place into the refrigerator to set for at least an hour.
  5. Lift the slice out of the container using the baking paper. Cut into rectangles for serving.
  6. Keep refrigerated until ready to serve as the slice will loose firmness when left out after an hour or so.

WILD ORANGE JAFFA BLISS BALLS

Now if my entire family approves, then these Jaffa Bliss Balls must be delicious (and it’s not just me and my healthy cray cray madness!).

Easy to make, absolutely bursting with REAL flavor, and turbo charged with the immune boosting properties of WildOrange essential oil! No artificial citrus substitutes here… This is the real deal, using certified pure, therapeutic grade essential oils (and chemically tested to be free of chemicals, pesticides, fillers and synthetic materials). Woohoo! Can I get a high five for REAL FOOD?!

Wild Orange Essential Oil is detoxifying, antibacterial, full of vitamin C and the aroma just energises and lifts the spirit… You’ll be bouncing around with glee while making these handmade delights!



JAFFA BLISS BALLS

Dairy Free, Grain Free, Gluten Free, Refined Sugar Free, Paleo.

Makes: 8-10 bliss balls approx.
Prep Time: 15 minutes

Ingredients:

2 cups of cashews
1 heaped tablespoon of coconut oil*
20 medium sized pitted dates
1/2 cup of cacao*
Shredded Coconut


Method:

1.     Process the cashews and coconut oil until they form a paste.
2.     Add the dates and cacao to the processor and whizz everything again (the cacao will form a quick dust storm within the processor, so make sure the lid is on tight and securely until it mixes through).
3.     Once combined, add the 5 drops of Wild Orange and process until everything is mixed together well.
4.     Scoop out a small portion of the mixture and roll into 2cm diameter balls.
5.     Roll the balls in shredded coconut to add a nice textured, crunchy coating.

And ENJOY!

LEMON CHEESECAKE BLISS BALLS



WARNING: ADDICTIVE! 

If you love the taste of tangy lemon in sweet treats, then these bliss balls are most definitely for you!

With a smooth cheesecake-like consistency, a delicious syrupiness on the tongue, and a zesty lemon accent to finish the sensation, what more could you want to satisfy an indulgent craving? ANY indulgent craving?

Take a look at the ingredients, there are only five and they are wonderfully nourishing.

Cashews: Packed with protein, iron, magnesium, phosphorus, zinc, copper and manganese. With a high copper content, the consumption of cashews helps the body utilize iron and eliminate free radicals, develop bone and connective tissue, and produce skin and hair pigment melanin.

Almonds: Extremely high in Vitamin E - a powerful antioxidant that protects our cells from damage and helps to maintain a healthy heart and healthy blood vessels. Almonds are a great source of manganese, biotin, and copper. Almonds also provide a source of magnesium, vitamin B-2 and phosphorous.

Lemon: One raw lemon (without the peel) provides 51% of daily vitamin C needs as well as small amounts of thiamin, riboflavin, vitamin B-6, pantothenic acid, calcium, iron, magnesium, phosphorus, potassium, copper and manganese.

Coconut Oil: The healthy fat that stops sugar cravings, boosts metabolism, supports immunity and aids digestion.

Dates: Iron for your blood, fibre for roughage, vitamin A for your eyes, potassium for your heart, B-vitamins, and tannins... Dates are one of the healthiest foods in the world!

I was pleasantly surprised (shocked) as to how good these tasted! Made from scratch from my own head… I have to admit, I was really proud of these special little treats. And now I am proud to share these with you!



LEMON CHEESECAKE BLISS BALLS

Makes: 6-7 heaped tablespoon-sized bliss balls
Soaking Time: 4 hours at least
Setting Time: 1 hour
Preparation Time: 15 minutes
Fat & Calories: Who cares when you’re eating healthy… Come on!


Ingredients:

1 cup of cashews soaked
5 dates
1 lemon
1 heaped tablespoon of organic coconut oil*
½ cup of raw almonds


Method:

1.     Soak the cashews in filtered water for at least 4 hours.
2.     Meanwhile, place the almonds into a processor and pulse until a rough crumb is achieved. Transfer the almond crumb into a wide based container. This is for coating the bliss balls later on.
3.     After soaking, drain the cashews.
4.     In a processor, combine the cashews, dates, the zest and juice of one lemon, and the coconut oil. Process for 5 minutes, or until a smooth cheesecake-like consistency has been achieved.

5.     Scoop the mixture into a bowl and place in the refridgerator for an hour (at least) to set.
6.     Roll a heaped tablespoons worth of mixture into  a ball.
7.     Roll the ball in the almond crumb until the surface is completely coated.
8.     Place balls in the freezer until ready to serve.
9.     Keep your lemon cheesecake bliss balls stored in the freezer.

VICTORIOUS VEGGIE MUFFINS


Approved by kids and adults alike!

When the days are hectic and there’s not even enough time on the clock to be making salads (or using a FORK to EAT for that matter), it can be quite hard to keep up with the daily requirement of 3 serves of vegetables. I prefer to have at least 5 serves of vegetables a day, and this can be really challenging at times. I love my veggies but there are occasions where I just can’t seem to allocate the TLC (TIME, love and care) to prepare them!
Baking these muffins at the beginning of the week provides an easy, go-to option packed with vegetables, protein and healthy fats – the perfect combination to satisfy hunger and eliminate cravings for naughty snacks later on!

You can pack the kids lunch boxes with these hearty little treats for a change too - they’ll be high-fiving you when they get home… And who wants a soggy old sandwich anyway? J


VICTORIOUS VEGGIE MUFFINS

Dairy Free, Grain Free, Gluten Free, Sugar Free.

Makes 12 Muffins (maximum)
Preparation Time: 30 minutes
Baking Time: 25-30 minutes

Ingredients:

8 free-range organic eggs
4 tablespoons of coconut milk
1 teaspoon of Peruvian Pink Salt*
Pinch of fresh cracked whole black peppercorns*
4 tablespoons of coconut flour
2 cups of almond meal
1 tablespoon of baking soda
1 teaspoon of onion powder
1 teaspoon of ground cumin
½ teaspoon of ground cayenne pepper*  (optional)
2 carrots grated
1 cup of shallots finely chopped
1 small handful of baby spinach roughly chopped
1 small onion finely chopped
1 clove of garlic finely chopped
3 tomatoes deseeded, diced and roasted (or ½ cup sun dried tomatoes, diced).
Tip: Save the tomato seeds and add to a salad dressing later on! 

Method:

1.     Preheat the oven to 180 Degrees Celsius and grease the muffin trays with coconut oil.
2.     Dice tomatoes and place on an oven tray with baking paper. Season then bake for 20 minutes or until starting to brown.
3.     Whisk the eggs, coconut milk, salt and cracked pepper in a large mixing bowl.
4.     Add the coconut flour, almond meal and baking soda to the egg mixture, and stir together well.
5.     Add the onion powder, ground cumin and ground cayenne pepper (optional) to the same bowl and mix well.
6.     Add carrots, shallots, baby spinach, onion, garlic and tomatoes to the bowl and stir in until all ingredients are evenly combined.
7.     Place mixture into muffin tins.
8.     Bake for 25-30 minutes or until golden brown.

I love this recipe! It’s so easy and you only use the ONE MIXING BOWL!

Note: As most schools are ‘nut-free’, you can easily adapt this recipe by replacing the almond meal with 6 tablespoons of coconut flour (so that’s 10 tablespoons of coconut flour in total). The batter will be a little denser and the mixture will not rise as much upon baking, but the taste will still be fantastic - in fact, they taste a little sweeter with just coconut flour. I quite enjoy them this way!
